INTERTAIGASTRO in Krasnoyarsk: world-renowned chefs and the latest gastronomic trends
Krasnoyarsk hosted the inaugural international gastronomic forum INTERTAIGASTRO. The National Centre RUSSIA branch in the Krasnoyarsk Territory brought together chefs and industry experts from six countries: Russia, Brazil, France, Malaysia, the United Arab Emirates and China. The forum became a natural continuation of the TAIGASTRO festival, which this year united six countries, 75 cities and more than 500 restaurants.
The forum focused on three key themes: authenticity, multiculturalism and technology. Participants discussed how to preserve local identity in a globalised world, combine traditions and embrace innovation. The speakers included Michelin-starred chefs and recipients of The Best Chef Awards and Gault & Millau honours, representing a wide range of the world's culinary traditions.
"We are creating a foundation for every chef across Russia. The knowledge generated here will become a roadmap for the entire country. For six years, TAIGASTRO has successfully brought together gastronomic enthusiasts, and now the time has come to step onto the international culinary stage," said Dmitry Zhurkin, founder of the project, co-owner and creative director of the Berrywood Family restaurant group.
The forum programme featured three presentation sessions and panel discussions. Each speaker presented their project through the three central themes of authenticity, multiculturalism and technology. The format encouraged not only presentations but also lively discussions and questions from the audience. Participants included representatives from Krasnoyarsk, Moscow and St Petersburg, as well as international guests.
"This is the first time we have expanded the forum. During the first three years, we invited chefs to exchange ideas. Now we are ready to add an educational component," emphasised Yekaterina Pugacheva, the project's curator and Chair of the Jury of The World's 50 Best Restaurants.
A distinctive feature of INTERTAIGASTRO was its practical programme. The headline chefs and working groups of 15 participants — chefs and students from the Institute of Gastronomy — continued their work over the following days. Each group, consisting of five participants, worked alongside both international and Russian chefs. The outcome will be a set of working principles for the key thematic areas and a series of special menu concepts to be introduced in restaurants across Russia this autumn.

INTERTAIGASTRO is an international educational project that reflects the core values of our organisation by fostering a systematic approach that brings together local businesses, the expert community and creative talent."
The Siberian Institute for the Development of Creative Industries, the key organisation responsible for advancing the creative economy in the Krasnoyarsk Territory, co-organised the project. The forum's partners included SberBusiness, the Art Style design group, STANFOOD Academy, international wholesale retailer METRO, and the Rich Cola brand. The INTERTAIGASTRO forum marked an important milestone in the development of gastronomy in Russia and in strengthening international professional cooperation.
