Grand festive show "Cuisines of the Peoples of Russia" to be held for the first time at the National Centre RUSSIA
A grand gastronomic show will take place on June 12 in the Gastronomic Rows of the National Centre RUSSIA in celebration of Russia Day. Enthusiastic entrepreneurs and chefs from different regions — true heirs to the traditions of Russian hospitality — will present festive dishes of national cuisine at seven master classes with tastings.
The event will be hosted by Yekaterina Shapovalova, author of the gastronomic programme of the "Journey. Food" project at the National Centre RUSSIA, and Denis Gorshkov, a commentator for the RBC channel.
The cooking class "Kamchatka-style Telnoye" will be led by members of a culinary dynasty — Svetlana Bokova, founder of the Far Eastern cuisine brand "Kamchatka House," her mother Irina Vladimirovna, and her four-year-old daughter Yeseniya. They will prepare telnoye made from sockeye salmon with mashed potato filling and a pink salmon roe sauce. This family recipe has been passed down the female line for over 100 years. At 13:45, the cooking class "Russian Cuisine from the Upper Volga: Plyos Uteshki Pies" by Alexei Shevtsov, author of the projects "Fish Corner" and "Hidden Russia", will take place. Miniature delicacy pies made with ultra-thin dough and various fillings will be prepared according to the recipe of the mistress of the noble estate Uteshnoye near the town of Plyos — Yekaterina Shchulepnikova.
At 14:30, during the cooking class "Chechen Cuisine: Zhizhig-Galnash," chef of the "DAAR" project Zulkan Khakimova and cook Zarema Tsamaeva from the Chechen Republic will teach guests how to make the Vainakh national dish — zhizhig-galnash: boiled meat (beef, lamb or halal chicken) with cooked dough pieces, served with a rich meat broth.
The cooking class "Buryat Cuisine: Buuz" will be held by Angarag Chagdurov, art director of the Buryat cuisine network "Orda," together with his mother Tuyana Kimovna Sodnomova, a chef. They will prepare the Buryat national dish — buuz. The shape of the buuz resembles the traditional Buryat dwelling — the yurt. Following ancient tradition, the dumplings are formed with thirty pinches and an opening left at the top. Start time: 15:15.
At 16:00, guests can learn how to prepare a signature dish of the peoples of the Far North — frozen sliced arctic fish — at the cooking class "Prepared by Cold: Stroganina from Arctic Char Fish." Native of Yakutsk and founder of the fish delicacies brand "Azbuka Severa" Danila Kozlov, along with cultural experts and Yakut cuisine specialists Albina Permyakova and Natalia Ivanova, will reveal the secrets of making this delicacy.
The recipe for the Don region’s traditional chiken pie, kurnik, will be presented by Oleg Kuchkov, author of the project and founder of the "Tsar-Kurnik" brand from Rostov-on-Don, at the cooking class "Russian Festive Pie: Kurnik" at 16:45. In 2017, ahead of the 2018 FIFA World Cup, he developed a street-food version of the kurnik, which he presented at the Gastronomic Map of Russia festival. Once a festive wedding dish, it has been transformed into a handheld snack.
The festive programme will conclude at 17:15 with the cooking master class "A Feast of Pies: Kulebyaka," where chef Mikhail Gavrilov from the ethno-cultural project "There Is Such a Place in Karelia" and chef Andrei Vinogradov from the "North" corner of the Gastronomic Rows of the National Centre RUSSIA and the mobile Arctic kitchen "Arctic Moon" will present a masterpiece of Russian culinary art — a three-metre-long kulebyaka pie.
Participants shared stories about the traditions and memorable places of their Motherland with compatriots and peers from abroad.
International guests from all over the world visit the National Centre RUSSIA as part of major international events.
