Vyacheslav Dubynin: "Yeast is our friend"
A varied diet that includes different types of bread and foods is healthier than any fashionable restrictions, while yeast and grains have played a key role in human development and remain an important part of a healthy diet. This was explained at the National Centre RUSSIA by Vyacheslav Dubynin, Doctor of Biological Sciences and Professor at the Faculty of Biology of Lomonosov Moscow State University.
"Yeast is our friend. It helped humans ferment food. Fermentation is almost as important as the use of fire. Heat treatment and fermentation made it possible for humans to obtain more calories and supply the brain with energy. When working with dough, yeast add additional vitamins and make bread more nutritious," the expert explained.
Vyacheslav Dubynin noted that the central part of the grain mainly contains starch and protein, while it has far fewer fibres and vitamins. That is why the whiter the flour, the tastier it is, but the less beneficial it is for health. According to him, fully white bread should be eaten less often, while wholegrain bread is preferable, as plant fibres are necessary to maintain healthy microflora and normal intestinal function.
