Traditional Fruit Pastille from Udmurtia
The Karakulino fruit pastille is a regional speciality of the Udmurt Republic. It is produced at a family-run apiary using the traditional method of preserving apples and berries for the winter. In the past, tart apples were slowly baked in a traditional oven, mashed into a purée and dried in the sun. Today, modern technology has made the process far more efficient. The apples are finely puréed, the fruit mixture is whipped and aerated, preserving the beneficial nutrients found in the skins, seeds and berries.
The pastille is dried at temperatures not exceeding 50°C. It is sweetened with locally produced honey, which retains all of its beneficial properties at this gentle temperature. The honey from the family apiary is a rare clover variety known for its pronounced antibacterial properties.
