Platform for a professional dialogue: the Open Day of the Institute of Public Catering at the National Centre RUSSIA
On 2 September, the National Centre RUSSIA is hosting the Open Day of the Institute for Public Catering at the V.M. Gorbatov Federal Scientific Centre for Food Systems of the Russian Academy of Sciences and the YUZH Group of Companies. The event is titled "Food Construction Kit. New Solutions for the Catering Market" and is held as part of the exposition "Region 2030. Platform of the Future". The multi-format interactive programme was dedicated to the use of ready-made frozen ingredients as a construction kit for the menu.
The event
began with an expert discussion involving technologists, product quality and
safety experts, chefs, and business community members. They discussed how
modern frozen products affect the quality and taste characteristics of the
food, how the composition of ingredients for dishes changes, and what
advantages the use of frozen semi-finished products provides.
"The
exposition "Region-2030. The Platform of the Future", which opened
today at the National Centre RUSSIA, shows how regions design the country's
tomorrow — in economics, culture and, of course, in gastronomy. Today's event
is a vivid example of how science, business and creativity come together for a
common goal: improving the quality and culture of nutrition. The activities of
the Institute of Public Catering are very consistent with our projects. In the
Gastronomic Rows of the National Centre, guests discover the cuisines of
Russian regions, from Caucasian spices to Far Eastern delicacies,"
Anastasia Zvyagina, Deputy General Director of the National Centre RUSSIA,
said.
According
to her, the "Journey Across Russia" display clearly shows that each
territory has its own unique taste and traditions, from northern fish to
southern fruits. It is from this diversity that the food culture of the future
is born.
"New technologies
and modern approaches are being discussed here today. We are sure that
precisely such solutions shape the nutrition culture of the new generation and
become part of the image of the futureRussia," Anastasia Zvyagina said.
Oksana
Kuznetsova, Director of the V.M. Gorbatov Federal Scientific Centre for Food
Systems, said that the Federal Centre deals with the entire food industry --
not only with catering, but with industrial production, as well.
"The
safety requirements for different raw materials and products are different,
sometimes certain categories even require unique food safety regulations. Our
institute accumulates all the competencies, and, it seems to me, quite
successfully translates them into the community of those who choose the ready-to-eat
food. Today's discussion was useful for industry professionals," she said.
The event is attended by heads of catering
companies, technologists, product quality and safety specialists, brand chefs,
people from procurement and supply departments.
