In honor of the holiday of Kurban Bayram, visitors to the RUSSIA EXPO were treated to dishes from the peoples of Chechnya and Dagestan
On June 19, guests of the RUSSIA EXPO immersed themselves in the traditions of one of the most significant Muslim holidays, Kurban Bayram (Eid al-Adha). Representatives from the North Caucasus regions of Russia — the Dagestan cuisine network "Dagestan Shop" (“Dagestsnskaya Lavka”) and the project from the Chechen Republic "DAAR" — treated everyone to festive national dishes and sweets and demonstrated a special masterclass. The event took place in Pavilion K, "House of Russian Cuisine".
The chefs from "Dagestan Shop" prepared Lak khinkal with meat in real time: men worked with the lamb, while women formed dumplings from the dough. The process was accompanied by detailed commentary revealing the secrets of preparation, as well as an engaging story about the traditions of Kurban Bayram in Dagestan. After the masterclass, the festive dish was offered to all who wished to try it.
"This is not just Lak khinkal: we wanted to break the stereotypes about what this dish should be, and we came up with khinkal in a Moscow style. Today we will serve it with lamb and a vegetable sauce developed by our chief technologist specifically for this masterclass. It's very tasty!" said Timur Bakhmetyev, the manager of the Dagestan cuisine network "Dagestan Shop."
In turn, the team from the Chechen cuisine project "DAAR" laid out a delicious and varied sweet table for the guests of the Exposition. Halva, sherbet and a variety of seasonal fruits were served as the festive dessert.
"If you come to Chechnya, you will definitely be treated to national sweets. This is our long-standing tradition associated with the sacred Muslim holiday Kurban Bayram, because during this holiday everyone visits each other, cooks and distributes sweets," noted Ibragim Askhabov, the manager of the "DAAR" corner of the Chechen Republic.
Kurban Bayram is an important Muslim holiday marking the end
of the pilgrimage to holy places. The event at the "House of Russian
Cuisine" provided the guests of the RUSSIA EXPO with a unique opportunity
to learn about the culinary and cultural traditions observed by Muslims in Russia.
