Pancakes "with meaning": the Gastronomic Rows of the National Centre RUSSIA invite to attend Maslenitsa Week
Maslenitsa Week (Pancake Week) in Russia is not just about traditional pancakes. Each of the seven days of the festival has its own character, mood, and traditions passed down through generations. At the Gastronomic Rows of the National Centre RUSSIA, these traditions are transformed into an engaging gastronomic journey. From 17 to 22 February, visitors can not only sample pancakes but also live each day of Maslenitsa as it was celebrated in old Rus — from warm friendly gatherings to grand public festivities.
You can start with the traditional folk day "Zaigrysh" (Game Day). This is the name of the second day of Maslenitsa, when bride viewings were held in Rus. The corner "North" invites guests to have "a viewing" of traditional Russian treats. Here attendees will be offered pancakes with berries, as well as classic oladyi (small thick pancakes) served with honey.
Maslenitsa Wednesday is traditionally called "Lakomka" (Gourmand's Day). One can indulge in pancakes with jam made from fir cones, which is an exotic treat for central Russia, or with minced filling from three types of fish, or mushroom julienne filling at the corner "East".
Thursday, called "Razgulyai" (Revelry), marks the beginning of so-called Broad Maslenitsa and the start of mass public celebrations. At the corner "West", guests can "revel" to their heart's content with pancakes topped with red caviar, as well as with lightly salted salmon with cream cheese.
One can conclude the Maslenitsa festivities with special "pancakes" abundantly offered at the corner "South". Here visitors will find thin wheat flour flatbreads, as well as chapilgi with four types of cheese or caramelised apples.
