Gastronomic Rows – "West": Baltic-style ukha, kalachi, Pozharsky cutlet, and Komi-Permyak posikunchik
The "Journey Across Russia. Food" space at the National Centre RUSSIA invites visitors on a gastronomic journey through the country. Here, dishes reflecting the culinary heritage of various regions are presented. The space is divided into four thematic zones – "South," "North," "West," and "East."
The "West" zone's introductory menu blends the culinary traditions of the Baltic coast, Central Russia, and the Urals with the hearty and authentic flavors of traditional Russian cuisine. The menu features Ural pelmeni (dumplings) with rustic butter, Baltic ukha (fish soup), the signature dish of one of Russia's oldest towns, Torzhok – the Pozharsky cutlet, as well as Komi-Permyak posikunchiki with cucumber "makalo." Slow-braised ribs with traditional Russian pickles are also on offer – the meat is roasted for hours in a traditional oven until tender and served with homemade preserves.
Guests can also try Russian-style sausages wrapped in a potato crust with cheese. A special highlight of the menu is an ancient Russian street food – kalachi – served with Bryansk pulled beef, slow-cooked turkey, or Karelian trout.
The "West" gastronomic space takes visitors on a journey through the western, central, and Volga regions of Russia, from the Baltic to the Urals, where culinary traditions have been shaped by trade routes and cultural exchanges.
The Gastronomic Rows at the National Centre RUSSIA are open daily except Mondays.
The Gastronomic Rows are part of the large-scale "Journey Across Russia" project, showcasing achievements from all federal districts of the country. The exposition of the Western Federal District highlights great Russian explorers, shipbuilding innovations, maritime trade, and the people whose discoveries and labor shaped these territories. Every visitor has the opportunity to uncover unique stories, traditions, and inspiration for future travels. A children's playroom is available for young guests.
