The Gastronomic Rows at the National Centre RUSSIA — an encyclopaedia of the country’s flavours
The Gastronomic Rows are part of the large-scale
"Journey Across Russia. Food" project at the National Centre RUSSIA.
They offer visitors a unique opportunity to "travel" across the
entire country in a single day: from the shores of Kamchatka to the Baltic
dunes, from the harsh tundra to sunlit mountain valleys. The Gastronomic Rows
bring together culinary traditions from different corners of Russia in one
space: here, geography takes on flavour, and every dish tells the story of its
home region, with its unique natural environment, way of life, dining
traditions and links between generations.
Top chefs and entire regional teams regularly visit the Gastronomic Rows at the
National Centre RUSSIA, recreating the unique recipes of the peoples of our
country and using modern technology to tell the story of their culinary
traditions. They bring with them more than just a new menu: they share the very
cultural identity of the places they call home through unusual local
ingredients, time-tested techniques and those everyday details essential to a
true understanding of a national cuisine. Through their aromas, flavours,
appearance and textures, these dishes offer a sense of what people in different
parts of the country take pride in and reveal more about the character of each
region.
Educational events add particular depth to the gastronomic experience. During masterclasses, leading chefs give audiences a glimpse "behind the scenes" in the kitchen and demonstrate how to use local ingredients in contemporary cooking while preserving their authenticity.
The Gastronomic Rows at the National Centre RUSSIA offer an engaging dialogue between the flavours, traditions and cultures of the peoples of our country. Come and piece together the story of Russia's flavours: recipe by recipe, bite by bite.
