Sturgeon with crayfish sauce, stewed beef cheeks and "Mammoth Lard" - tastings and masterclasses January 13
The
gastronomic show Cuisine of the Black Soil Region on the Day of the Voronezh
region at the RUSSIA EXPO will open with a tasting of EkoNiva products and
presentation of the Russian Breakfast project. Masterclasses and tastings from
the best chefs of Voronezh region are waiting for the guests: the menu of the
day will include main dishes, drinks and desserts.
Russian Breakfast - millet porridge with baked
pumpkin; Black Soil - profiterole stuffed with smoked pikeperch, sour barrel
cucumbers and potato cream; masterclass from Evgeny Matusevich, brand-chef of
Restorator Projects Senoval (Hayloft).

Ostrogozhskiye apples with chamomile tea; masterclass by Albina Rodygina,
pastry chef of Senoval restaurant.
• Voronezh
Peter's pearl porridge - prepared by Dmitry Vyrodov, president of the
Association of Culinary Workers and Restaurateurs of the Black Soil Region,
founder and chef of the culinary studio KUHMISTER.
• Vareniki
with baked potatoes and cracklings; masterclass will be held by Andrey
Lushnikov, brand-chef of 15/86 restaurant, Voronezh.
•Voronezh
sturgeon with wheat and Don crayfish sauce - presented by Konstantin
Klyuchnikov, chef of the restaurant # Moscow, Voronezh.
• Stewed
cheeks from Voronezh marble beef under pine fir sauce and root vegetables with
forest mushrooms; masterclass by Elena Medvedeva, chef of El Chico restaurant,
Voronezh.

Presentation of infusions with tasting by Nikita Tatarinsky and Mikhail
Trukhachev, Kulturno Korotko (Culture in Short) project, Voronezh.
•Tasting of
gastronomic souvenirs from Voronezh - marshmallows Black Soil and Mammoth Lard.
