Okroshka Festival has started in the Gastronomic Rows of the National Centre RUSSIA
The Okroshka Festival has been launched in the Gastronomic
Rows of the National Centre RUSSIA. On 19-24 August, the chefs will present their versions of this summer
dish: from classics to original versions inspired by the culinary traditions of
different regions of our country.
As part of
the festival, seven new kinds of this traditional cold soup will be available
in all corners. The "West" gastronomic corner will present classic
lean okroshka made with dark kvass and horseradish, and okroshka made with
Doctor's Sausage and dark kvass. In the "South" gastronomic corner,
guests will be able to try the "Men's" meat okroshka with ham, leg,
tongue and dark kvass, as well as okroshka with carp and currant kvass.
Andrey
Vinogradov, chef of the "North" gastronomic corner, has offered two
kinds of this summer dish: fisher's okroshka with smoked Murmansk halibut and
white unfiltered kvass, and northern okroshka with stewed Lovozersk venison and
Borodino kvass, to which fried potatoes are added.
"I
came up with the idea to add two of our northern products – Murmansk halibut
and venison – to the okroshka. Halibut is a very tender fish, we cook it for a
couple of minutes, then smoke it a little on apple chips. We cook venison using
a Sous vide method of cooking: keep it for 6 hours at a low temperature in a
vacuum. We order reindeer legs from Taimyr, and peel them. It is important not
to over-cook venison, otherwise the taste of the meat may become similar to the
taste of the liver. The rest of the okroshka ingredients are classic: cucumber,
radish, potato, dill," explained Andrey Vinogradov.
Gastronomic
corner "East" will present Far Eastern okroshka with cold-smoked
sockeye salmon and kvass of the visitor's choice -- Borodinsky or unfiltered
white kvass with horseradish.
"Sockeye
salmon from Kamchatka is our red gold. We are smoking it with the help of
modern equipment. Finely chop it so that the guests can taste all the
ingredients together," said Svetlana Bokova, brand chef of the
"East" gastronomic corner.
In
addition, on 22 August, from 14:00 to 15:30, cooking classes featuring various
kinds of okroshka will be held in the Gastronomic Rows of the National Centre
RUSSIA. Experienced chefs will share their secrets. Everyone can
participate.
The partner
of the Okroshka Festival is the Moscow beer and alcohol-free beverage company
"Ochakovo".
