Secrets of modern gastronomy to be revealed at the National Centre RUSSIA
Today, every unusual flavour combination is driven by technology, experimentation and the search for new sensations. On 16 May, the National Centre RUSSIA will host the gastronomic masterclass "Chef-Researcher". Yevgeny Meshcheryakov, concept chef of the restaurants "Beluga", "Blok", "Umi Oysters" and "More na Patrikakh", invites guests to step into the world of modern gastronomy, where the chef becomes a researcher and food becomes a way to surprise and inspire.
"We will talk about the science behind dishes and the ways that make it possible to create high-quality food for your table. And, without doubt, we will taste dishes as well: a burger with a pollock patty, a salad with Kaliningrad sardines and smart spices, tom yum soup, and rice noodles with smart spice activation," said Yevgeny Meshcheryakov.
During the masterclass, guests will discover why high-tech food is safe, delicious and thoughtfully designed. Together with experts, visitors will explore the role of chemical processes behind the appetising crust on a steak, natural extracts and flavourings, and will also learn about advanced Russian technologies in the food industry.
Three signature dishes will become the gastronomic embodiment of the theory. A canapé burger with a pollock patty and sweet chilli sauce will demonstrate how science helps tame delicate minced fish and turn it into the perfect patty. A green salad with Kaliningrad sardine dressing and "smart" spices will showcase the power of high-tech flavour enhancers — without preservatives, yet with rich and vibrant taste. Meanwhile, tom yum rice noodles will reveal the secret of "activation magic": guests will see how simple ingredients, under expert guidance, transform into a dish with deep and multi-layered flavours.
