"Gold" of Adygea, sweets made from goat’s milk and marmalade from wild berries: gastronomic discoveries at the RUSSIA EXPO
At the Farmers Fair in Pavilion 48, you can taste unusual
condensed milk, Adygean national cheese and classic soft and hard cheeses, as
well as smoked meat. The guests are welcome this week, from May 7 to May 12.
One of the most unusual sweets will be presented by a
participant from the Tver region. This is cajeta — creamy caramel made of
goat's milk. Cajeta is cooked over an open fire according to a traditional
Mexican recipe. Goat's milk was chosen for a reason. Unlike cow's milk, it
better withstands long heat treatment, almost without losing its unique
qualities. It becomes caramelized, dense and thick, but it is still rich in
protein, calcium and easy to digest, besides, goat's milk is hypoallergenic.
The company offers goat milk cajeta with vanilla, sea salt and cinnamon, while
fudge and delicate goat milk candies have a melting texture and creamy flavor.
Cheese lovers will be glad to taste and buy Adygean national
cheese, suluguni, chechil, brynza. There are smoked and soft cheeses, as well
as cheeses with Caucasian spices. In addition, farmers from the Tambov region
will bring their best cheese. For more than 3 years the producers studied the
experience of Italian cheese factories and researched the taste preferences of
the Russian buyer, tasted more than a hundred different cheeses and as a result
they selected cheeses for production, which by their taste qualities will
satisfy any, even the pickiest buyer. The cheese factory is located in the most
ecologically clean region of Russia. Traditionally, the Tambov land is a black
earth land. Therefore, the fodder grown on Tambov meadows has a special flavor
of grasses, which is passed on to the milk.
For those who prefer meat products, there will be a rich
choice of smoked meats from Adygea: beef delicacies, chickens, ducks, turkey,
quail and much more. And also sausages and cured meats according to traditional
Italian and Spanish recipes from the Belgorod region.
A participant from the Arkhangelsk region will present a
delicious marmalade with a high content of wild berries: more than 20%. Berries
are collected in the northernmost parts of the Arkhangelsk region, on the coast
of the White Sea. Berries grown in the North contain more vitamins and
microelements than berries from more southern regions. Here the summer is
short, and the berry ripens in very difficult conditions. Therefore, it
accumulates the maximum amount of useful substances.
